We are able to provide a wide range of Caribbean foods for private events so please contact us to discuss any requirements that you have. However here are some of the more popular dishes available from our catering trailer or for private functions.

Jerk chicken
Our signature dish! The word Jerk is a bit of a mystery but is believed to come from the Peruvian 'charqui' - meaning dried meat. This traditionally Jamaican way of cooking involves marinating the meat in a variety of herbs and spices including pimento (allspice), thyme, scotch bonnet pepper, cinnamon, black pepper, ginger and nutmeg. The meat is then barbecued or grilled (traditionally over pimento wood to give the distinctive flavour). We use chicken thighs which we either grill on the trailer or barbecue on our oil drums. In the Caribbean, Jerk is served pretty hot but we tend to keep it to a mild/medium heat on the trailer- you can always add some of our Hot pepper sauce if you like really spicy!

Strips of beef seasoned with black pepper and paprika and slow cooked with onions and bell peppers. This is slightly spicy and in a rich gravy.

Curry goat
Another Jamaican specialty and one of our most popular dishes! We use locally farmed goat meat, slow cooked (and on the bone) which is served with potatoes and small dumplings in a medium heat curry sauce.
Curry mutton
We cook our mutton in the same way but usually use boneless meat and keep it gluten free without the dumplings on the trailer.

Oxtail
This is a popular Jamaican dish in which we slow cook the oxtail with butter beans. It creates a very rich gravy and is delicious traditionally served with white rice. You have to get stuck in though and suck the bones!

One of our vegan specials. Chickpea curry has its roots in Asia and there are very strong Asian culinary influences across much of the Caribbean thanks to workers that emigrated there in centuries past. This is a mild Caribbean curry and includes coconut for extra creaminess.

Shoulder of pork, browned and then slow cooked with yam/eddo and carrot in a rich, quite sweet gravy.

Ackee and saltfish
The national dish of Jamaica. Ackee is actually a fruit which produces pods and a soft yellow flesh which is very creamy and mild in flavour. The plant was originally introduced in the Caribbean from Africa in the 1700's. It is very tricky to describe if you've never had it but it is not completely dissimilar to scrambled egg in texture (although this does do the ackee some disservice I think!) Anyway, it is cooked with saltfish (salted cod- a throwback to the days of trading with Europe), peppers, onions and scotch bonnet and usually served with fried dumplings and/or breadfruit or other 'hard food' for breakfast.

A West African inspired vegetarian dish. The sweet potatoes are cooked down with peanut butter and crushed peanuts, flavoured with spices such as cinnamon and coriander and finished with sliced fresh greens or spinach. (Seasonal variations can occur!)
